Bread
Maida 2.5cups
Milk powder 3tbsp
Sugar 2tbsp
Yeast 1.5tsp
Salt 1tsp
Refined oil 
Warm water

Sift the ingredients in sieve 
Add water and knead dough
Add oil
Stretch and roll and knead 
Lift the dough and beat
Knead into a ball
Place into greased bowl
Cover with cling wrap 
Place in dark place for 11/2hrs till doubles
Sprinkle some maida
Roll with roll pin 
Roll into roll and seal edges
Place into greased tray and cover with lid
Pour salt in preheated kadhai
Place round base
Place tin in kadhai and bake for 30min

Poha
Poha 100gm
Groundnuts 50gm
Onions medium size two chopped 
Green chillis 2-3 sliced
Lemon 1/2 
Curry leaves 15
Cumin 1/2tsp
Mustard 1/2tsp
Sugar 1/2tsp (optional)
Salt to taste 
Turmeric powder 1/3tsp
Oil 3-4tbsp
Coriander chopped 
Also bhujiya/sev for garnishing 

Add poha to strainer 
Add water and wash
Soak for 10min
Preheat pan
Roast groundnuts and transfer to plate
Add oil and heat
Add cumin and mustard and fry
Add chillis and curry leaves and fry
Add sugar and mix 
Add onion and fry till golden for 2min
Add turmeric powder and fry
Add groundnuts and mix
Add salt and mix
Add poha and mix
Close lid and cook for 1min
Open lid
Squeeze half lemon and mix
Add coriander and mix
Close lid and cook for 1min
Remove lid and mix 
Turn off gas flame 
Transfer to serving plate
Garnish with sev and lemon slice

Halwa
Suji 1/2cup
Ghee 1/2cup
Sugar 1/2cup
Cashews 1tbsp
Almonds 1tbsp
Pistachios 1tbsp
Cardamom 6
Kesar 6
Milk 2tbsp
Water 11/2cup

Slice the dryfruits
Fry the dryfruits in ghee
Soak kesar in milk
Make cardamom powder 
Remove the dryfruits in plate
Fry the suji in remaining ghee
Add water and close lid and cook
Stir occasionally 
Add dry fruits 
Add sugar and cook
Add kesar milk
Add cardamom powder 
Stir and cook for 1min

Khichdi
Sabudana 1cup
Water 1cup
Groundnuts 3/4cup
Oil 2tsp +2tbsp
Potato 1
Cumin 1tsp
Curry leaves 8
Green Chillis 2
Salt 1/2tsp
Coriander 1/2cup

Wash sabudana
Soak in water for 6hrs
Boil potato 
Fry groundnuts in oil 
Course ground the groundnuts 
Peel potato and dice into cubes
Fry in 2tbsp oil till crispy 
Fry cumin till crackles 
Mix the potato and cumin
Fry curry leaves 
Fry chopped chillis
Add soaked sabudana
Add groundnut powder 
Add salt and mix
Cook till sabudana becomes transparent 
Garnish with chopped coriander 

Upma
Ghee 1tbsp
Suji rava 1cup
Water 11/2cup
Oil 1tbsp
Cashews 5-6
Peanuts 11/2tbsp
Mustard 1/2tsp
Cumin 1/2tsp
Urad dal 1tbsp
Curry leaves 7-8
Onion 1
Ginger 1/2tsp
Chilli 1
Salt 1/2tsp
Coriander 1/3cup

Add ghee to frying pan 
Add suji and roast
Transfer to bowl
Boil water in pan
Turn off flame
Fry peanuts in oil
Fry cashewnuts
Fry urad dal
Fry mustard and cumin till crackles 
Add curry leaves 
Add chopped small onion and fry to golden
Add ginger paste 
Add chopped chilli
Add salt
Add chopped medium tomato
Cook on medium flame to form saute
Add suji
Add hot water and cook 
Garnish with peanuts,cashews and coriander

Cookies
Ghee/butter 1cup
Icing sugar 1cup
Besan 1cup
Maida 1cup
Cardamom powder 1tsp
Milk
Dry fruits sliced 

Mix all ingredients and knead into dough 
Make small balls and press to make flat and make cookies 
Garnish with dry fruits 
Pour salt/sand into cooker
Place the cookies onto idli stand
Bake in cooker

Chakli
Rice flour 1cup
Besan 1/2cup
Salt to taste
Asofeteda  1pinch
Chilli powder 1/2tsp
Butter 2tbsp
Turmeric 1/2tsp
Sesame 1tsp
 
Mix all ingredients 
Add water
Knead into dough 
Grease with butter
Oil chakli maker
Drop chakli on greased saucer 
Fry in oil
Cool and store in airtight container

Drink herbal tea (Kadha) made from Basil (Tulsi), Cinnamon (Dalchini), Black Pepper 
(Kalimirch), Dry Ginger (Shunth), Mullethi and Raisin (Munakka) once or twice a day. Add 
jaggery (Gur) and /or fresh lemon juice to your taste, if needed.

Oral rehydration solution by mixing 1 liter of water with half a teaspoon of salt and 6 teaspoons of sugar will cure diarrhea

Whipped cream

Beat the eggs in bowl
Add sugar and beat till dissolves 
Add oil and beat
Add essence and beat
Sift the maida and baking powder in sieve
Add to above and mix to form batter
Grease microwave safe cake tin
Pour cake batter into the tin
Microwave for 3min
Refrigerate 
Apply icing

Roll into Swiss roll

Achapam waffles 
Maida 1/2cup
Rice flour 1/2cup
Sugar 1/2cup
Egg 1
Sesame 1tbsp
Salt 1pinch
Water
Sweet cream 

Mix the ingredients 
Make the batter to dosa consistency 
Heat oil in kadhai 
Dip achapam maker in oil
Dip to 3/4 height in batter
Dip in Kadhai to fry
Shake till achapam comes off
Overturn by zara
Fry both sides till golden
Fill petals with cream

Creamy Waffles 
Maida 1/2cup
Rice flour 1/2cup
Sugar 1/2cup
Egg 1
Salt 1pinch
Water
Sweet cream

Mix ingredients to form waffle batter 
Place waffle plate on tava/ use waffle maker
Oil the plate
Pour batter with ladle and spread 
Cook till crispy 
Make two such waffles 
Apply cream to Waffle with cheese spread 
Place other waffle on top as sandwich 

Potato chips 
Potatoes
Salt
Water

Wash the potatoes 
Peel the potatoes using peeler 
Pour water in bowl
Add salt to water 
Put the potatoes into water
Slice using slicer or peeler
Soak the slices in water
Spread the chips on dry cloth
Fold and pat dry 
Dry in air for 5min
Fry the chips till golden in deep kadhai
Remove in chalni
Sprinkle salt to taste
Ratio of salt
Water 1/4cup
Salt 1/2 tsp

Finger chips
Potaoes 1/2kg
Salt 1/2tsp
Pepper powder 1/2tsp
Chilli powder 1/2tsp

Wash the potatoes and peel
Dice the potatoes into long cubes
Cook in water for 10min
Strain the water
Dry in air for 5min
Fry till golden in frying pan 
Remove in chalni
Sprinkle salt,chilli powder and pepper 

Banana chips 
Raw bananas 3
Water 4tbsp
Salt 1tsp
Turmeric powder 1/4tsp
Oil for frying 

Cut slit from side in banana
Peel with oiled hands
Slice in slant with chipser
Fry in oil
Add water to bowl
Add salt and turmeric powder and mix
Add the spice water when chips fried

Jackfruit chips
Jackfruit 
Salt
Turmeric powder 
Chilli powder
Chaat masala 
Pepper powder 

Slice the jackfruit
Marinate in Salt, turmeric, chilli powder for 10min
Fry in oil 
Sprinkle chaat masala and pepper powder 

Ice-cream 
Milk 1cup
Cornflour 1tbsp
Sugar 1/4cup
Cream 1/3cup
Icing sugar 1/2cup
GMS Glycerol monostearate 1/2tsp 
CMS Carboxy methyl cellulose 1/4tsp
Gelatin powder 
Salt
Strawberry essence 1tsp
Red food color 3drops
Silver balls

Boil milk and separate cream
Heat 3/4cup milk in pan
Add sugar
Add 1/4cup milk to bowl
Add cornflour to thicken
Add GMS for emulsifying
Add CMC for stabilizing 
Add gelatin for smoothening
Add salt to avoid ice crystals 
Mix well
Add the milk in bowl to boiling milk
Stir  till thick 
Turn off flame
Cool 
Transfer to bowl and close with lid
Refrigerate for 6-7hrs
Remove from freezer and leave for 2min
Cut the set milk
Transfer to big bowl
Mash with beater
Whip with electronic beater till smooth for 4-5min
Add cream
Add icing sugar
Whip for 15min till volume becomes 4times
Add essence and blend
Spread butter paper in ice tray
Pour 1/2 the white mixture in tray
Refrigerate for 1/2hr
Add food color and blend
Pour the pink mixture in tray
Cover with butter paper to reduce ice formation
Cover with lid and refrigerate for 6-7hrs
Remove butter paper
Slice the ice-cream 
Transfer to serving plate or transfer ice cream  scoops to ice cream bowl with spoon
Garnish with silver balls

Fruit custard 
Milk 1/2l
Custard powder 2tsp
Sugar 4-5tsp
Papaya
Apple
Green Grapes
Black grapes 
Pomegranate 
Chickoo

Dice the fruits and make 1cup each
Add custard powder to bowl 
Add milk and mix
Boil milk in pan
Add sugar and stir 
Pour the custard paste and stir continuously 
Cook till thick 
Cool 
Add fruits
Refrigerate 

Fudge
Chocolate big 1 100gm
Butter 4tbsp
Condensed milk 400gm
Walnut 1/2cup
Mawa 1cup

Chop the chocolate 
Heat butter in pan
Add chocolate 
Add condensed milk 
Cook till thick 
Add walnut
Add mawa
Cook stirring constantly 
Pour in greased tray
Set for 1hr
Make slices
Refrigerate 

Chikki
Peanuts/chana/poppy seeds/puffed 
rice/dry fruits/coconut 150gm
Jaggery 150gm
Butter/ghee 1tsp
Water 3/4cup

Roast peanuts for 4-5min
Cool the peanuts 
Rub in plastic bag to remove skin
Crush with steel bowl to split into halves
Add water to saucepan
Add jaggery 
Cook till melts and thickens
Grease tray with ghee
Pour mix into tray
Spread evenly with rollpin
Allow to cool 
Make cuts with knife
Cool to room temperature 
Demold
